Should I pick violin or strings?

Violin when one violin carries a line of its own. Strings when a whole section plays together — telling one violin apart from twelve playing the same notes is not something the recording supports.

Can I remove the saxophone instead?

Yes. Saxophone is one of the 8 parts Exclude can take out of a mix, so you can make a play-along track without it.

Can I isolate every instrument in an orchestra at once?
